Crispy chilli wraps (gluten & dairy free)

Ingredients

CHILLI BEEF & PORK INGREDIENTS:

Olive oil

Salt & pepper to taste

1 tsp brown sugar

500g beef mince

500g pork mince

2cm piece ginger

2 chillis

2 cloves of garlic

1 lime (juice and zest)

4-5 spring onions

1 tsp fish sauce

1 iceberg/baby gem lettuce

DIPPING SAUCE INGREDIENTS:

1 tsp brown sugar

1 tbsp gluten-free soya sauce

1 tbsp olive oil

1/2 tbsp fish sauce

1 chilli

1 lime (for juice only)

Large bunch coriander


Method

Chilli beef & pork

1. Put 1 tbsp olive oil in a frying pan over a high gas

2. Season the mince. Add the mince to the pan. Break it up with your fingers as you do. Stir continuously and shake the pan

3. Cook the mince for longer than ever before to make it crispy (about 10-15 mins)

4. Sieve the mince to drain it. Wipe out the pan with kitchen roll (don’t wash it)

5. Put the pan back on a low heat

6. Finely chop the chilli, ginger and garlic. Slice the spring onions (including the green bits) thinly

7. Add 1 tsp oil to the pan. Fry off the ginger, garlic and chilli

8. Sprinkle a tsp brown sugar in the pan. Stir until it has caramalised

9. Add the mince again. Pour in the fish sauce

10. Grate the lime zest straight into the pan. Squeeze in the lime juice

11. Add the spring onion. Leave on heat for 20-30 seconds. Remove

12. Use the lettuce leaves as wraps

Dipping sauce

1. Add brown sugar, soya sauce, oil and fish sauce to a bowl. Stir

2. Chop the chilli finely (do not remove the seeds) and also the coriander. Add to the bowl

3. Add lime juice to finish. Mix

Serving suggestion: Serve the meat, lettuce and sauce separately so your dinner guests can make their own wraps
