Free-from chorizo and spinach pasta

Ingredients

2 tsp olive oil

200g free-from pasta

225g chorizo (e.g. Tesco Finest - check for milk)

3 cloves of garlic (peeled and sliced)

1 red pepper (deseeded and sliced)

5 spring onions (green and white bits sliced)

125g spinach

Optional: Salt and pepper to taste

Optional: Fresh chilli or chilli sauce/oil (e.g. Germano's chilli oil) if you like it spicy


Method

1. Prepare the vegetables and slice the chorizo

2. Cook the free-from pasta in a large pan as per the instructions on the packet. Cook it for slightly longer if you prefer it tender

3. Fry the chorizo and garlic (and fresh chilli if you are using it) in a frying pan using a little olive oil over a medium-high heat. Stir-fry continuously for approximately 5 minutes

4. Add the red pepper. Continue to stir-fry for approximately 5 minutes

5. Add the spring onion and spinach. Stir-fry for a further 5 minutes (until the spinach is tender). Season to taste

6. Once the pasta is cooked, drain (and rinse with boiled water if required) and add the pasta to the frying pan. Stir well

7. Add chilli sauce if you wish

Serving suggestion: Serve with a crisp green salad. Free-from garlic bread goes really well with this dish too.
