Rough & ready coleslaw (dairy free)

For an egg-free/vegan option - use an egg-free mayonnaise

Ingredients

1 carrot

2 full slices/ 4 half slices white cabbage

½ - 1 onion (white or red)

4 heaped tbspns mayonnaise (check for milk/lactose)

Salt & pepper to taste


Method

1. Grate the carrot

2. Chop the cabbage roughly

3. Slice the onion and chop to desired size (I like mine quite chunky)

4. Put the veg into a bowl. Stir in mayonnaise (adding more or less if you wish). Ta-da – simple!

Serving suggestion: Goes beautifully with any salad, however my new favourite is to accompany pulled pork.
