Gluten-free strawberry and white chocolate cheesecake

Ingredients

75g butter

175g gluten-free digestives (e.g. Asda - contain gf oats. Use alternative free-from digestives if you cannot tolerate these)

200g cream cheese

200g white chocolate (check it is gluten free)

200g fromage frais

200g strawberries (chopped)

Few leaves of fresh mint


Method

1. Melt the butter in a saucepan over a low heat

2. Meanwhile crush the digestives (put them in a food bag and use a rolling pin)

3. Once the butter is melted, remove from the heat and mix in the digestives

4. Line the base of a 20cm, round, loose-bottomed cake tin with foil

5. Press the biscuit mix into the bottom of the tin with the back of a spoon

6. Melt the chocolate in the microwave or use a bowl over a pan of water. Allow to cool slightly

7. Whisk together the cream cheese and fromage frais in a large mixing bowl until completely                  smooth

8. Add the chocolate and strawberries (except 4 pieces). Mix well with a wooden spoon

9. Spoon the mixture over the biscuit base

10. Decorate the top with the remaining strawberries and fresh mint. Put in the fridge for at least 2        hours to set

Serving suggestion: Serve with cream if you feel really naughty!
