Vanilla celebration cake (gluten & dairy free)

Ingredients

VANILLA CAKE

380g dairy-free spread (e.g. Vitalite)

380g golden caster sugar

7 eggs

380g gluten-free self-raising flour (e.g. Dove's Farm)

2 tsp xanthan gum

1 vanilla pod

Pinch of salt

4 tbsp rice milk

SYRUP

65g golden caster sugar

3/4 tsp vanilla paste

60ml water


Method

CAKE

1. Preheat the oven to 160°C

2. Grease and line a 25cm round cake tin

3. Scrape the seeds out of the vanilla pod into a large mixing bowl. Add the spread and sugar. Cream together

4. Beat in the eggs one at a time

5. Sift in the flour, xanthan gum and salt. Fold into the mixture

6. Add the milk. Stir

7. Spoon the mixture into the cake tin. Level out the top with a knife

8. Bake in the oven for approximately 1 hour 40 minutes or until cooked through (ensure that when you stick a metal skewer into the cake, it comes out clean)

9. Leave the cake in the tin  to cool slightly

SYRUP

1. Stir together the sugar, vanilla paste and water until fully mixed

2. Make holes into the top of the cake with a skewer all over

3. Pour the mixture all over the top of the cake once the cake is cooled slightly

4. Allow to cool completely prior to removing from the tin

 

 

Serving suggestion: The cake is beautiful by itself, but you can also decorate as you wish. In the photo - it is the bottom layer and filled with butter-cream and jam, then covered with apricot jam and 'ready to roll' icing. Icing figures, butterflies and letters were then added
