Ingredients
500g strawberries
400g Lactofree soft white cheese
5 tablespoons icing sugar
4 large meringues (crushed)
Method
1. Puree half the strawberries with a blender
2. Chop the remaining strawberries into slices and save 4 pieces for decoration
3.Put the soft cheese into a bowl and add the icing sugar. Stir
4. Fold in the strawberry puree
5. Next fold in the chopped strawberries
6. Divide the mixture between 4 wine glasses, add a strawberry piece to the top and decorate with fresh mint
7. Chill in the fridge until serving
Serving suggestion: Pour over some Lactofree cream
