I was really dreading the first day back to work after my holiday – but a lovely thing happened to me.

I was subjected to a random act of kindness at work… someone cleaned my car!

This is a massive deal, as my car has not been washed for over two years and, quite frankly, it was a job that was never going to be completed by myself.

I halved the recipe, omitted the ground almonds (as I am allergic and they are banned from my house) and replaced them with a mixture of oats and coconut flakes, which I blitzed in the food processor until they resembled ground almonds.

The truffles were a hit. And the fact they were healthy (with no dairy, wheat or refined sugar) was an absolute bonus.

I now have a clean car, a new friend and an awesome warm feeling inside – what a great way to start 2016!
