Gluten-free Vietnamese noodle rolls

Alternatives:
Omit the prawns for a VEGETARIAN/VEGAN option. Add chopped cucumber or spring onion as an alternative veg

Ingredients
DIPPING SAUCE
Small piece (approx 2cm) of root ginger (peeled)
1 tbsp/small bunch coriander
1 red chilli (de-seeded)
1 tbsp brown sugar
Juice of 2 limes
2 tsp sesame oil
3 tbsp water
Optional: A pinch of salt
NOODLE ROLLS
1 tbsp/small bunch coriander
12 small mint leaves
1/2 carrot (peeled)
Optional: 50g roasted & salted peanuts
100g fine rice noodles
250g cooked and peeled prawns
12 spring roll wrappers (e.g. Blue Dragon spring roll wrappers)
Method
DIPPING SAUCE:
1. Grate the ginger with a fine grater. Thinly slice the chilli. Finely chop the coriander
2. Put the sugar, lime juice, sesame oil and water in a bowl. Mix together
3. Add the chopped ingredients. Mix. Add the salt (if you wish)
3. Cover with cling film. Put in the fridge
NOODLE ROLLS:
1. Cook the rice noodles as instructed on the packet (usually in the microwave or in boiling water). Drain if required
2. Whilst the noodles are cooking, chop the coriander and peanuts (if using them). Grate the carrot
3. Put the rice noodles in a large bowl. Pour over the sesame oil. Add the nuts, coriander, carrot and prawns (if using). Mix
4. Immerse the spring roll wrappers in warm water one at a time for 8-10 seconds (or as instructed on the packet). Place on a clean, damp tea towel to dry off slightly
5. Place each spring roll wrapper on a plate/chopping board one at a time. Add 1 mint leaf. Fill the centre of the wrapper with the noodle mixture (1-2 tbsp). Fold in each end of the wrapper and roll (starting by folding 1 side 1/3 across the filling). Serve immediately or keep in the fridge until ready
Serving suggestion: Serve with the beautiful dipping sauce as an authentic starter
