Ingredients
250ml Lactofree cream
100g Lactofree soft cheese
1 tbsp + 300g caster sugar or golden caster sugar
4 egg whites
1-2 punnets raspberries or strawberries (or both)
1 tsp icing sugar
Method
1. Preheat the oven to 150°C
2. Grease and line a baking tray
2. Whisk the egg whites on a medium setting until they form stiff peaks (they must hold there shape completely)
3. Gradually add 2 tbsp sugar and salt whilst continuing to whisk
4. Now whisk on the high setting until smooth and glossy (usually takes about 8 minutes). Be careful that you do not whisk for too long however as the meringue will start to collapse
5. Now spoon 5 large blobs onto the baking tray in a circle – slightly overlapping. Make each one into a swirl by taking a spoon head and circling it from the bottom to the top
6. Bake the meringue for approximately 1 hour until the meringue is golden
7. Leave the meringue in the oven until completely cooled or even overnight (if the meringue is taken out prior this time it will crack)
8. When ready to serve – chop the fruit
9. Whisk the cream until it forms slight peaks
10. Add the soft cheese and continue whisking for about another minute
11. Spoon the mixture in the centre of the meringue and then decorate with the fruit
12. Sprinkle with icing sugar to finish
