Ingredients

2 tablespoons olive oil

1 onion

3 small potatoes

5 large eggs


Method

1. Put the olive oil into a small (8 inch) pan and put it on a low heat

2. Fry the onions and potatoes until they have softened (approximately 20 minutes). Continuously turn to ensure they don’t brown

3. Beat the eggs slightly so that the yolks are broken

4. Add the onions and potatoes to the egg and mix together so that the potatoes are broken up

5. Put a tablespoon of olive oil back into the pan and heat slightly

6. Pour in the mixture and keep on as low a heat as possible. Cook for 20-25 minutes

7. Use a plate over the top of the pan to tip the tortilla out of the pan. Slide it back in the pan to cook the other side for a further 20-25 minutes

Serving suggestion: Serve with rocket, cherry tomatoes a spoon of aioli (contains egg)


Add chopped ham or peppers to make it more exciting. Boil the potatoes for 5 minutes instead of frying to save time.
