Ingredients
2 tbsp oil (e.g. olive)
4 (approx 800g) casserole/braising beef steaks
2 cloves garlic (peeled & chopped)
3-4 carrots (peeled & sliced)
3-4 large potatoes (peeled & chopped into bite-sized pieces)
1 onion (peeled & chopped)
5 runner beans (sliced into 3cm pieces)
5 sprigs of thyme
5 leaves of sage
1 tbsp gluten-free Worcestershire sauce (e.g. Biona Organic)
2 tbsp tomato puree
2 tbsp gluten-free plain flour (e.g. Dove's Farm)
700ml beef stock (made with 1 stock cube, e.g. Knorr, or home-made) - check for milk/lactose
Method
1. Pre-heat oven to 160°C
2. Chop the meat, garlic, carrots, onion, potatoes and beans
3. Heat the oil in a casserole dish over a medium heat
4. Brown the meat (approximately 5 minutes). Add the garlic, carrots, potatoes, onion and beans. Fry until softened a little (for about 10 minutes). Stir regularly
5. Add the thyme, sage, Worcestershire sauce and tomato puree. Stir
6. Add the flour. Stir so everything is coated
5. Add the stock. Stir. Simmer
7. Cover and cook in the oven for 3 hours. Remove the lid and cook for a further 30 minutes. This would also work nicely in a slow-cooker (can you tell I’m a busy Mum?)
Serving suggestion: This casserole is ready to go! A lovely one pot job.
