You can use normal mayo if it is safe for you - please note that it contains egg and check for milk/cream too

Ingredients

6 medium-sized potatoes

4 heaped tbsps of free-from mayonnaise (e.g. Tesco's mayo-maize)

3 spring onions

Salt and pepper to taste


Method

1. Peel the potatoes, wash and chop into bite-sized pieces

2. Place in a saucepan and cover with boiling water. Boil for approximately 15 minutes or until the potatoes are tender enough to eat (test them with a fork)

3. Drain the potatoes and set aside to cool. Chop the spring onion

4. Once the potatoes are cool, add the spring onions (saving a little for decoration) and mayo. Season to taste

5. Mix well with a spoon and decorate with spring onion and/or fresh herbs

 

Serving suggestion: This is a perfect side-dish for barbecues or to take on a picnic.
