Gluten-free lemon cake

Ingredients

CAKE

350g dairy-free spread (e.g. Vitalite or Pure)

350g golden caster sugar

6 eggs

350g gluten-free self-raising flour (e.g. Dove's Farm)

1 3/4 tbsp xanthan gum

Grated zest of 2 lemons

1.5 tbsp dairy-free milk (e.g. rice or soya)

DRIZZLE

100g golden caster sugar

Juice of 2 lemons


Method

CAKE

1. Pre-heat the oven to 160°C

2. Grease and line a 23cm round cake tin

3. Cream the spread and sugar with a wooden spoon until soft and fluffy

4. Add one egg at a time and stir it well to mix it in completely

5. Sift in the flour and xanthan gum

6. Grate the lemon zest into the mixture. Add the milk if the mixture is too dry or thick, otherwise it is not essential

7. Mix well – it should be pale and a nice dropping consistency

8. Spoon the mixture into the cake tin and smooth the top with a spoon/knife

9. Put in the oven and bake for approximately 1 hour 30-40 minutes – until golden brown on the top. Test with a metal skewer to make sure no runny mixture remains on it

10. Take out of the oven and allow to cool in the tin for at least 10 minutes

DRIZZLE

1. Squeeze the lemons through a sieve into a bowl/container

2. Stir in the caster sugar until the sugar is fully dissolved

3. Put little holes all over the top of the cake with a skewer

4. Pour the drizzle all over the cake

5. Leave the cake in the tin until the cake has fully cooled and the lemon drizzle has dried

Serving suggestion: Use dairy-free butter cream and rolled icing to ice the cake if you want it for a celebration.
