Slow cooker meat balls

Alternatives:

For a veggie option use a meat mince substitute e.g. Quorn – contains gluten and egg). Leave out the onion and garlic for a low FODMAP meal. For a milk-free option use water, rice milk or beaten egg instead of the Lactofree milk

Ingredients

850g mince

1 red pepper (chopped)

1 onion (chopped)

25g white breadcrumbs (using 1 slice gluten-free bread e.g. Genius )

2 heaped tablespoons basil (chopped)

Salt & pepper

1 tablespoon dried oregano

50ml Lactofree milk

1 tablespoon sugar

2 tablespoons olive oil

3 cloves garlic (chopped/crushed)

1 tablespoon oregano

2 tins/400g chopped tomatoes


Method

1. First prepare the sauce – add the olive oil to a saucepan and heat on a low-medium heat

2. Chop the whole onion, and put half of it into the pan and cook over a medium heat until they are soft and translucent (approximately 10 minutes)

3. Chop or crush the garlic and add that to the pan. Cook for 1 minute

4. Add the tomatoes, oregano and sugar and bring sauce to the boil for 5 minutes

5. Reduce the temperature to low and simmer for 30 minutes if possible (reduce the time to 15 minutes if you are short of time)

6. Whilst the sauce is cooking prepare the meatballs – chop the red pepper and make the breadcrumbs (use a food processor for both of these if it is easier)

7. Chop the basil

8. Add the mince, red pepper, breadcrumbs, oregano and basil to a large bowl. Season to taste and mix together

9. Form the mixture into approximately 20 meatballs

10. Place the remaining half an onion in the bottom of the slow cooker. Put the meatballs on the top and pour over the tomato sauce (when it is ready)

11. Cook on low for 6-8 hours

Serving suggestion: Serve with a green salad and gluten-free spaghetti (e.g. Tesco Free From Spaghetti – contains soya). A sprinkling of Lactofree mature cheddar cheese (contains milk) works a treat!
