Gluten-free meatball sarnie

Ingredients

1 x gluten-free panini (e.g. Schar panini roll)

3 x meatballs (see link for recipe below)

1-2 tbsp tomato sauce (see link for recipe below)

Squirt of mayo - check for milk

Squirt of chilli sauce

4 slices MozzaRisella or other dairy-free cheese

4 slices cucumber

2 slices babygem lettuce


Method

Use this recipe for the meatballs and tomato sauce if you wish

1. Bake the panini as per the packet instructions (if using Schar rolls, 8-10 minutes at 180°C)

2. In the meantime, chop the meatballs in half and heat in a pan with the tomato sauce. Heat over a low-medium heat for approximately 5 minutes. Stir regularly

3. Remove the panini from the oven once baked and slice down the middle. In the middle, layer the meatballs, tomato sauce, mayo and MozzaRisella slices and return to the oven for a few minutes

4. Remove from the oven. Add the salad and chilli sauce and serve

Serving suggestion: Spoil yourself good and proper with this sarnie for lunch. Yum!
