Lamb and chorizo delight (gluten free)

Ingredients

500g lamb mince

1 bay leaf

2 large sprigs mint

4 tbsp red wine

225g chorizo - sliced (e.g. Tesco Finest Spanish). Check for milk

4 sprigs thyme

2 sprigs rosemary

1/4 onion

1 tin chopped tomatoes

3 garlic cloves - chopped finely

1 carrot

1 red pepper

3 tbsp olive oil

Salt & pepper to taste


Method

1. Chop the garlic, vegetables and chorizo

2. Heat 1 tbsp of oil in a frying pan over a medium heat. Brown the mince ( approx 10 mins). Drain the fat. Set aside

3. Boil the red wine in a small saucepan until reduced to roughly half the amount (takes approx 3 mins. Set aside

4. Next heat 2 tbsps oil in a large saucepan over a medium heat. Fry the onion and garlic for a couple of minutes until softened. Add the chorizo. Stir continuously until browned (approx 5 mins)

5. Add the carrots, red pepper, thyme, rosemary and bay leaf. Fry gently for 5 more minutes until the vegetables are softened

6. Now add the cooked mince, reduced wine and tomatoes. Season to taste

7. Gently simmer on a low heat (so only just bubbling) with the lid on for 20 minutes – 1 hour (you can leave it for up to 4). Alternatively put it in a slow cooker and cook it on low for 4-6 hours. Stir occasionally and add a little water if it is becoming dry

8. Add the mint 15 minutes before the dish is ready

9. Remember to remove any herb stalks before serving!

Serving suggestion: Serve in wraps with chopped lettuce and cucumber or serve with rice and a green minty salad.
