Pork in peppercorn sauce (gluten and lactose free)

Ingredients
900g pork fillet (remove fat and chop into 2cm chunks)
Salt & pepper to taste
50g lactose or dairy-free spread (e.g. Lactofree or Vitalite)
25g gluten-free plain flour (e.g. Dove's Farm)
150ml dry white wine
150ml chicken stock (e.g. Kallo) - check for celery, milk and gluten
250ml lactose or dairy-free cream (e.g. Lactofree or soya)
1 tsp Dijon mustard
1 tsp lemon juice
2 tsp peppercorns
Method
1. Mix the flour and seasoning together on a plate. Coat the pork
2. Put a large frying pan (heavy based) over a medium-high heat. Melt the spread
3. Add the pork. Fry on each side until browned and ensure cooked through (5-10 minutes). Put pork aside. Keep it warm on either a hot plate or in the oven at a low temperature
4. Remove any fat from the pan. Turn up the heat
5. Add the wine and stock. Bring to the boil. Stir well – scraping the bottom of the pan. Allow sauce to reduce to a quarter (approximately 5 minutes)
6. Add the cream and mustard. Continue to boil for approximately 5 minutes
7. Add the lemon juice and peppercorns. Add more seasoning if required
8. Serve the pork with the sauce poured over the top
Serving suggestion: Lovely with your favourite vegetables and either potatoes or rice.
