Slow cooker pulled pork (gluten free)

Ingredients
1 tbsp oil
Small piece of root ginger (1 tbsp when chopped)
4 cloves of garlic
1/2 onion
2 kg pork shoulder (no bone)
Salt & pepper to taste
260 ml stock (chicken or pork, e.g. Knorr) - check for gluten, lactose/milk
3 tsp Chinese 5 spice seasoning
2 tsp paprika
3 tbsp soft brown sugar
2 tbsp tomato puree
4 tbsp gluten-free soya sauce (e.g. Kikkoman Tamari)
Method
1. Heat the oil in a heavy-based frying pan over a medium-high heat
2. Peel and finely chop the ginger. Peel and slice the garlic. Chop the onion
3. Brown the pork by frying on each side (approximately 10 minutes in total)
4. Season with salt and pepper if you wish
5. Put the pork in a slow cooker with the fat at the top
6. Stir-fry the onion, garlic and ginger in the frying pan (in the pork fat) until softened
7. Add 200ml of stock to the frying pan. Bring to the boil. Add the tomato puree, Chinese 5 spice & paprika. Stir, scraping the bottom of the pan. Allow the sauce to thicken (5-10 minutes)
8. Add the remaining 60 ml of stock. Reduce heat
9. Add the sugar & soya sauce. Stir
10. Pour the mixture over the pork. Fully coat the pork by turning it if required
11. Cook in the slow cooker on low for 8-10 hours
12. Remove the pork from the slow cooker carefully
13. Pour the juice into a jug. Leave until the fat has settled on the top. Skim off the fat with a spoon and discard
14. When the pork has cooled sufficiently – cut the strings (if there are any) and pull it apart using two forks. Remove any large chunks of fat that remain
15. Pour the juice over the pork and mix it in
Serving suggestion: Serve in a gluten-free bun with some lovely coleslaw (see our recipe). Yum! It is perfect for a party or a large family gathering.
