Sweet & sour pork chops

Ingredients

2 red peppers

1 red onion

3 tablespoons olive oil (check label for nuts)

1 tablespoon sugar

Red wine vinegar

Large bunch of fresh basil

Extra virgin olive oil (check label for nuts)

4 pork chops

8 sprigs fresh thyme

2 cloves of garlic


Method

1. Chop the peppers and onion

2. Heat the olive oil in a frying pan

3. Add the onion and pepper

4. Season to taste and add the sugar

5. Stir continuously

6. When the mixture starts to brown add the red wine vinegar

7. Add the Extra Virgin olive oil and stew for 2-3 minutes

8. Slice the basil and add to the pan. Cook for 30 seconds and switch the heat off

9. Pour the mixture into a bowl

10. Put the pan back on the heat, add a little more oil if you need it

11. Cut 2-3 slits into the rind of the chops

12. Season the chops and press it in with your hands

13. Crush the garlic with a knife

14. Add the chops to the pan, then the garlic and then the thyme

15. Cook for 4 minutes

16. Turn the pork over and press the garlic so it comes out

17. Cook for 4 minutes

18. Allow the pork to rest for at least 5 minutes

Serving suggestion: Serve with the peppers and new potatoes
