Tasty free-from chorizo pasta

Ingredients
Olive oil
3 rashers of bacon (chopped)
225g chorizo - check for milk and gluten
1 red chilli (chopped)
2 cloves of garlic (peeled and chopped)
1 red pepper (chopped)
1 tbsp tomato puree
1 tin of chopped tomatoes
1 courgette
1 tsp dried oregano
1 tbsp fresh basil (and a little for decoration)
350g gluten-free/free-from pasta - check for milk, soya, egg and sulphites
Salt and pepper to taste
Method
1. Chop the pepper, garlic and chilli, and prepare the courgette by using a vegetable peeler to make shavings
2. Fry the chorizo in a little frying pan in 1 tsp of oil until darker and slightly crisp (about 5 minutes)
3. Add 1 tbsp oil to a large frying pan and heat (over medium-high). Stir fry the garlic and chilli for 1-2 minutes
4. Add the bacon until browned (about 5 minutes)
5. Add the cooked chorizo, vegetables, chopped tomatoes, oregano and tomato puree. Bring to the boil
6. Simmer for approximately 10 minutes. Stir occasionally
7. In the meantime, put the pasta on to cook as per the instructions on the packet (usually add to boiling water and boil/simmer for 10-15 minutes)
8. Add the basil and season to taste. Stir
9. Drain the pasta when ready. Add to the frying pan and mix together with the sauce and meat
10. Serve, decorating with some fresh basil
Serving suggestion: Serve with a lovely crisp salad and/or free-from garlic bread. Add some amazing garlic chilli sauce (like our fave Germano's) to make it absolutely delicious.
