Ingredients
3 tbsp oil
2 pork chops
2 garlic cloves (peeled and crushed)
2 bay leaves
1/4 tsp fennel seeds
2 limes
Fresh parsley
Salt and pepper to taste
Method
1. Pour 2 tbsp oil into a bowl or large food bag. Add the garlic, juice and zest of 1 lime, fennel seeds, bay leaves and parsley. Stir well
2. Add the chops and ensure fully coated with the marinade. Cover the bowl or seal the bag
3. Marinate the pork chops for at least 1 hour in the fridge (or overnight)
4. Heat the remaining 1 tbsp oil in a frying pan over a medium-high heat
5. Fry the pork chops for approximately 8-10 minutes on one side and then 5-10 minutes on the other side (depending on if you like them slightly charred or not). Season to taste. Ensure the meat is cooked all the way through
6. Leave to rest for a few minutes before serving. Decorate with the remaining lime or parsley. Serve with a wedge lime to squeeze over the pork
Serving suggestion: These pork chops are delicious and go really well with potato wedges and roasted vegetables.
