Padron peppers (pimientos de Padron)

Ingredients
150g Padron peppers (I found them in Lidl in the UK)
1 tbsp olive oil
Large sprinkle of coarse sea salt
Method
1. Heat a large heavy-based frying pan over a medium-high heat
2. Place the peppers in the pan and sprinkle on the salt
3. Fry the peppers for between 3-5 minutes – continuously shaking the pan to make sure each side of each pepper is cooked. They often shrivel up which usually means they’re cooked, but if they don’t you can press them with a spatula to see if you can push them flat. Cooking time can depend on the size of the peppers
4. Once cooked, remove from the pan. They often shrivel up once they are removed from the heat
Serving suggestion: These are great to have for a starter or as part of a tapas spread. In Spain, you often get the odd spicy one, but I've not noticed that with the ones I've bought in the UK yet..
