Pumpkin smoothie

No cooking required (unless you need to boil the fresh pumpkin)

Ingredients
150ml pumpkin puree (fresh or tinned)
1 ripe banana (peeled, sliced and frozen)
200ml coconut milk
1 tsp maple syrup
1 tsp of ground cinnamon
¼ tsp of ground nutmeg
¼ tsp of ground ginger
¼ tsp of ground allspice (tweak dependent on taste)
1/8 tsp of ground cloves
Method
– If you are using fresh pumpkin – chop the pumpkin into chunks and cover with water in pan. Bring to the boil, cover and simmer for approximately 20 minutes (or longer if it is not soft enough). Blend to puree
– To make the smoothie – blend all of the ingredients together until smooth and serve
Serving suggestion: An excellent way to use up pumpkin after carving or just to give you a lovely kick of spices.
