FROZEN FAN: The best free-from food for your freezer

Lazy cook and coeliac Kay Harrison has reclaimed her freezer – and loves what shops are now offering.

Things are hotting up in my freezer.

For years after being diagnosed with coeliac disease, the only gluten-free things in there were ice cubes and bread (normally eight sad loaves I’d picked up from Boots). But the selection of free-from frozen food has rocketed this year. As someone who works late, has a child and has questionable cooking skills, it warms my heart.

The latest discovery that will now make my weekly shopping list is Pizza Express’s GF margherita (another one of those where you have to scratch around among rotting banana peels in the bin to find the empty package to be SURE it is gluten free).

There was something deeply satisfying about being able to slob on my sofa in my dressing gown watching Netflix and be eating decent pizza within 15 minutes like a “normal” person. Granted, I’d rather have a more exciting topping but, hey, us coeliacs are easily pleased.

I know, I know, a packed freezer doesn’t make for the healthiest of diets. But, oh, is it convenient that brands and supermarkets are stepping up.

So I’m reclaiming my freezer. And these are my top frozen free-from foods in there this week. Let me know if I should be buying something else.

Bosh it in the microwave and have a meal in minutes. Granted, it can be a bit sloppy. But it still beats my attempts at a GF lasagne. The macaroni cheese is pretty decent comfort food, too.
