Chicken kebabs (gluten and dairy free)

For a vegetarian option - replace the chicken with tofu or fresh vegetables such as courgette, peppers and red onion

Ingredients
3 large chicken breasts
juice of 2 lemons
1 1/2 tsp ground cumin
1/2 tsp cinnamon
1/2 tsp garlic granules
1 1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 tbsp tomato puree
1 tbsp white wine/rice vinegar (check for gluten)
Method
1. Add all ingredients except the chicken to large bowl. Mix together
2. Chop the chicken into 4-5cm pieces. Add to the bowl. Fully coat with marinade
3. Cover and chill for a minimum of 2 hours or preferably overnight
4. Put the chicken onto 3-4 metal skewers
5. Preheat the grill to a medium-high setting
6. Grill for approximately 10 minutes (turning regularly) in total until they are slightly charred. Make sure they are cooked right through
Serving suggestion: Serve with a free-from garlic gluten-free naan (e.g. Tesco), garlic mayonnaise, chilli sauce and the classic takeaway side salad of white/red cabbage, lettuce, cucumber and tomato.
