Gluten-free bitter chocolate orange cake

This a dark, bitter chocolate cake. Try with dairy-free spread to soften the taste if you wish

Ingredients

CAKE:

A little dairy-free spread/oil to grease cake-tin (e.g. Vitalite)

1 orange

100g dark chocolate (check for lactose/milk, gluten, nuts and soya)

240g oil (e.g. sunflower)

280g sugar

4 eggs

25g cocoa

280g gluten-free self-raising flour (e.g. Dove's Farm)

1 1/4 xanthan gum

GANACHE

200g dark chocolate (check for lactose/milk, gluten, nuts and soya)

225ml Lactose-free/dairy-free cream (e.g. Lactofree/Alpro soya)


Method

CAKE:

1. Preheat the oven to 180°C. Grease (with lactose/dairy-free spread or oil) and line a 23cm round cake tin with greaseproof paper

2. Put a pan of boiling water over a high heat. Pierce the orange right through with a skewer. Boil the orange in the pan for 25-30 minutes

3. Remove the orange. Allow to cool a little. Puree the orange by either using a food processor or chopping it slightly and blending

4. Break the chocolate up and melt it either in a bowl over a pan of simmering water or in the microwave (takes approximately 2 minutes). Stir regularly. Allow to cool

5. Pour the oil into a large bowl. Add the sugar and eggs. Beat

6. Add the orange. Continue beating

7. Add the chocolate. Stir

8. Sift the cocoa, flour and xanthan gum into the bowl. Stir well (ensuring that everything is mixed together)

9. Pour/spoon the mixture into the lined cake tin

10. Bake in the oven for approximately 80 minutes (until the cake is cooked through – test by inserting a metal fork/skewer into the cake and ensure it comes out clean). If it is beginning to brown too much, put a piece of foil over the top

11. Allow to cool for 10 minutes in the tin

12. Remove cake from tin and cool completely on a wire rack

CHOCOLATE GANACHE

1. Break the chocolate into a heatproof bowl

2. Pour the cream into a pan. Bring to the boil over a high heat

3. Pour the cream into the bowl so the chocolate melts. Stir until smooth

4. Leave to cool completely and wait for the ganache to firm enough to spread over the cake (it should completely hold its shape)

5. Spoon the ganache on to the top of the cake. Swirl aound to make it look pretty

6. Decorate with a slice of orange

 

Serving suggestion: Surprisingly this is great served with even more cream! Does the orange count as your 1 portion for fruit the day?!
