It is described as a relish and is to be eaten with your meal but it went down so well on Christmas Day last year, I wanted to take this recipe a little further. After going back to the shops after Boxing Day to restock supplies, I made it again but I added a cooking apple (softening it in a pan with a little coconut oil) and the juice and zest of a couple of limes to the original recipe… BINGO! The family could not get this down their throats fast enough. It truly was a joy to behold, the smiling faces and happy tums.
